I had a stack of clean trays up on the front counter spot, but they all disappeared when I started a new day. specifically the ones in the tray holder disappeared, but the few loose ones I had elsewhere stayed

Had the same problem. You can stop them despawning if u put the trays in the tray box before ending the day
Same for me / us.
